I came across this delicious recipe in Dr. Will Cole's new book, Ketotarian. I made a few small changes (omitted salmon only b/c I didn't have it! & added some cheese for my hubby and kiddos). This was a relatively easy dinner to make and everyone was happy!
Ingredients: Avocados halved, (organic, free-range) eggs, sea salt and turmeric (optional cheese or diced salmon). Directions: Preheat oven to 400. Scoop out ~1 T of avocado, otherwise the egg will not fit!! I learned that the hard way... egg whites spilled on to my pan making it very hard to clean ;-) Drop one egg in to each avocado half. Sprinkle with sea salt and any spice you like. Bake for 15 to 20 minutes. I baked for 20 minutes and the yolk was no longer runny (as my daughter prefers). Add cheese the last 5-8 minutes of baking.

On of my favorite things about visiting Ohio is my mom's garden. Tonight I made a stir fry using vegetables I picked from her luscious garden - can't get much more fresh or local than that!
Ingredients: Beets, celery, kale, Brussels sprout greens, onion, broccoli, nutritional yeast, salt & pepper. My biggest tip is to avoid overlooking - allow the veggies to keep a bit of crunch. I LOVE "beverages"... mixing the perfect concoction to serve friends brings me great joy. Today marks the 3rd day in a row where I've made a drink that makes your taste buds dance and is full of vitamins and minerals and other "good stuff" your body needs. Of course, everyone's taste buds are different, so tweak these recipes so YOUR taste buds will dance ;-) Since this is just a hobby of mine, you'll notice a few things that might be different than other bloggers... measurements are NOT exact (hence the " ~ " symbol), the picture is low quality (snapped from my iPhone), and I do not list the nutritional breakdown. Also, change up any ingredient with something you have/like better! It's just a smoothie - if it doesn't' turn out well, just a great excuse to make another batch! GREEN COCONUT "MILKSHAKE" * ~1 can unsweetened coconut milk * ~3 big leaves of greens from garden (spinach & lettuce) * ~2 T almond butter * ~2 T hemp seed * ~2 T flax meal (I don't even bother grinding it - let the mixer do the work!) * ~2 T chia seeds * 1 scoop collagen peptides * cinnamon (few splashes) * sprinkling of sea salt * LOTS of ice! Blend all the above ingredients in a high-powered blender until smooth-ish - and enjoy! KITCHEN SINK SMOOTHIE LUNCH This is literally me throwing whatever I can find in my fridge & cupboard into the mixer... * ~3/4 cup Coconut water * ~ 1/2 cup Ginger water (chopped up fresh ginger in a cup full of water - soaked at least 24 hours) * 3 leaves of greens from the garden (lettuce & radish leaves) * ~3 T Sunflower seed butter * ~2 T hemp seed * ~2 T flax meal (I don't even bother grinding it - let the mixer do the work!) * ~2 T chia seeds * ~1/3 of a big lemon, plus rind * ~2 T frozen mixed berries * ~3/4 cup frozen peaches * cinnamon (few splashe) Blend all the above ingredients in a high-powered blender until smooth-ish - and enjoy! HERBAL COFFEE ICED LATTE * ~2 heaping T Dandi Blend * ~1/2 cup unsweetened coconut milk * ~3 T unhomogenized, local heavy cream * 1 scoop collagen peptides Blend all together and pour over a cup of ice... mmmmm - all the tastiness of coffee and none of the jitters! I love to move my body - I often describe myself as 'created to move'. I preach to anyone who will listen about how important it is to 'move your body as often as possible and in as many ways as possible!'
A few days ago I planted seeds in my brand new raised bed garden - super exciting! As I was watering them, my hose broke. I was annoyed about the timing - now that I need my hose every day, it breaks! In order to water the seeds (and the other various plantings throughout my yard), I decided to use my watering can - and I was grateful to have one! I found myself agitated with the many trips I had to make between the watering spicket and my garden. For those who know where I live, you're probably laughing... I literally had to walk about 60/70 feet to refill my watering can! Around the 3rd trip, I realized this was actually an opportunity! -to move my body more and in slightly new ways! I played around with using different hands to water with (feels more strange than you'd think!), squatting and balancing on different legs while filling the watering can, etc. Suddenly the agitation gave way to gratitude. In case you are wondering, I did not decide to make this new way of watering THE way. I bought a new hose and it arrived today!!! I will happily use it AND will continue to look for new 'opportunities' to move (more) of my body more of the time!' |
